Asparagus hint of the day

Yesterday’s Radionics class went wonderfully.  One of our participants commented at lunch that the asparagus was really good. Not too raw and hard and not too soft and
asparagus-in-panmushy.  the best way to cook asparagus I have been taught was to lightly steam or saute it for just a short while till the asparagus starts to turn bright green…Then get it the heck off of the heat.  Pour your favorite sauce on it or have it neat.  As  near quote from the movie the 100 foot journey goes.  the boss talking to her chief chefs as she picks up a asparagus-on-plate-with-lemon-slliceslimp soggy stalk of asparagus. No one in my restaurant puts out this kind of food.  it should be bright green and crisp.  My favorite sauce is a fresh lemon butter sauce that is out of this world.  I will probably put that out on this blog soon.  Happy Thanksgiving
